Mandi’s Signature Pumpkin Cranberry Spice Muffins

Yields: 24+ muffins

These are my favourite muffins. They’re autumnal and festive feeling from the warm spicy scents and full of vitamin A from the wonderful pumpkin.

Dry Ingredients:
1 1/2 cups dried cranberries
4 3/4 cups whole wheat flour flour
2 cups white sugar (easily replaced with xylitol for a diabetic friendly variation)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoons salt
1 1/2 teaspoons nutmeg
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground ginger
zest of one orange

Wet Ingredients:
6 eggs
1 (29 ounce) can pumpkin
1 cup unsweetened applesauce

Bake 350 degrees aprox. 22-25 minutes
